I need to not eat out and learn how to cook..so this is going to be my journal of me doing that! yay!




Shepherd’s Pie VI - Adapted from allrecipes.com [recipe link]

Ingredients:

Directions:

  1. Wash, peel, and cut potatoes into 1/2” pieces
  2. Peel carrots
  3. Boil a big pot of water and add some salt.  Add potatoes and carrots and boil for 15 minutes.
  4. Chop or mash carrots and set aside
  5. Mash potatoes with butter, cheese, onion and garlic.  Add salt and pepper to taste.
  6. In a skillet, cook onions until clear.  Add beef and till brown, then add the water, gravy powder, flour, ketchup, and worcester sauce.  Add the Simmer until it starts to get thick.  Then add the mixed veggies and mix!
  7. Lay the meat mixture at the bottom of the casserole pan, then add the carrots then mashed potatoes on top.  To make it look nice, fluff the potatoes with a fork and then sprinkle cheese of top.
  8. Bake for 20 minutes at 375 degrees.
  9. Then, set the oven to broil and broil for 3-5 minutes, checking often until the tips of the potatoes are brown and crispy!
  10. Enjoy!!!!!

Sorry for the bad picture!  My apartment has really bad lighting…-____-;
1)  Spinach Chicken Parmesan (lower left) - Had some chicken…had some spinach…so I searched for “chicken and spinach” on allrecipes.com and came up with this! [Recipe Link] Super tasty and simple.  Next time…I would be sure to brine the chicken AND pre-bake it 15 minutes before adding the spinach.  Also, I used FRESH spinach instead of frozen…so I just added the leaves to the butter/onion/garlic (added) before adding the flour/milk.  Yummy!
2) Spinach+Balsamic Vinaigrette+Dried Crainberries
3) Rice!

Unbelievably Awesome Barbeque Chicken Pizza…haha what a name for a recipe! [Recipe Link]
LP and I also added onion, tomatoes, and chopped basil from our basil plant!
Got the dough from Trader Joe’s for like…1.79 or something like that…love that place!  Should have flattened it down more…and prebaked it before putting stuff on it, probably would have been crispier!
KC Syle BBQ Sauce and Marinara Sauce also from Trader Joe’s!  Got Skim 2% mozzarella cheese from Safeway…put it all together and you get some good stuff =]
I might cut down on the sauce a bit next time because the sauce was kind of runny…but other than that, a super good, super simple recipe!

September 28th, 2009 - Dinner

1) Tex-Mex Bacon-Wrapped Chicken Nuggets! [recipe link] This is soooooo tasty!! But so bad for you X_x

2) 2 parts Hoisin Sauce + 1 part Peanut Butter + water…heat in a sauce pan under low heat and adjust portions to taste!

3) boil vermicelli noodles, boil pork belly + slice, put it all on a rice paper wrapper with lettuce and wrap it up!

4) gotta wrap it up with some tasty healthy fruit!  Got these at a stand by Fruitvale BART for $2/pound…I think I got ripped off but the fruit was hella sweet and yummy…so no regrets!


Made Mini Maple Pancake Muffins [recipe link] for SASComm 09-10 for breakfast before hiking the beautiful 7.2 mile Matt-Davis Trail in Marin!
I used paper muffin liner…but didn’t grease it and the sides stuck to the paper!  So…don’t use paper and bake it directly in the pan is probably the best idea like the author of the recipe!

Dinner tonight: OKONOMIYAKI!! soooo yummy!!  Went to an Asian market on 16th street and Mission before heading home after Public Allies training.  Only spent 5 bucks for tomatoes, cherry tomatoes, dozen eggs, 2 lemons and CABBAGE!  HELLA CHEAP!  Decided to make Okonomiyaki for dinner =]  cheap and filling!

Found a recipe here: [Recipe Link], modified to serve two (eventually made 2.5 okonomiyakis)

Modifications:  Added some dashi powder to the water.  Left out the bacon…instead got imitation crab, teriyaki marinated chicken, pork that my mom marinated, squid, and onion chopped up into little pieces.  First I sautéed onions, then threw in the meats and seafood and cooked them most of the way through.  Removed everything into a holding bowl.  Added about half the cabbage mixture and pressed it down with a spatula.  After it cooked for a bit, I added the meat/seafood mix to the top of the cooking cabbage pancake…swished it around and FLIP!  SKILLZZ!! (ask me if you wanna learn how to do it and I’ll teach you, hehe)  Cook it for a while on that side, flip again, making sure its CRISPY and cooked all the way through.  Then put on a plate, add the okonomiyaki sauce (aka worchester sauce), japanese mayo, and sprinkle on Nori Fumi Furikake rice seasoning…then you’re done!

YUMMM!!! Enjoy!!!

Dinner for Tuesday the 15th!

Tried Veri Veri Teriyaki that I bought while it was on sale from Berkeley Bowl.  Marinated overnight.  It was okay…not bad, but not the best.  With a side of deviled eggs (boiled, yolk mixed with a little mayo, salt, pepper and pipped into eggs w/ a ziplock bag and sprinkled with red chili powder), broccoli from the day before, and bok choy!

“Eggplant - Easy Good and Tasty” [Recipe Link] Alterations: Pre-cooked the eggplant for 7 minutes on each side in the oven.  Didn’t have italian dressing so I used balsamic vinaigrette instead, which worked fine.  Also, instead of dicing the tomatoes, I put them on the eggplant as slices.  Story: Sophy’s friend Phi came over and cooked us dinner (which was really tasty…AND her first time cooking!)  There was a leftover eggplant…so I wanted to use it.  Google eggplant recipe and BAM!  BEST non-asian eggplant EVER!! SOOO YUMMY!!
“Tri-Colore Orzo” [Recipe Link] Alteration: Added cranberries!  Story: Went over to Anh’s (who’s the author of Confessions from the Cookie Jar!  Visit her!) for dinner and she made this!  It was sooo yummy so I wanted to make it on my own =D
“Lemon+Lime+Herbs Checken Breast” Recipe: 2 chicken breast, 1 lemon, 1 lime, a few shakes of: rosemary, garlic salt, oregano, italian herbs, pepper, oregano then marinate and cook! Story:  I made this one on my own!  Would have let it marinate overnight if I had the chance.
